Coconut Banana Pancakes

You’ve probably already gathered that here at Balance and Glo we are big fans of brunch - but if we had to pick, pancakes would probably be one of our favourite go to recipes! They just look so pretty and feel just that little bit indulgent - the perfect weekend treat to be savoured and enjoyed with friends and family. And they are actually a lot easier to make than you think - bonus!

This is another signature recipe from our Winter Wellness retreat in November, and makes enough for two people - that is if you are willing to share…



  • 1 banana

  • 1 cup of oats (approximately 90g)

  • 1 egg or to make the recipe vegan 25g of chia seeds soaked in a non-dairy milk alternative (use enough milk to cover the seeds)

  • 1 tsp of vanilla paste


  1. Heat a frying pan and add a tsp of coconut oil (our favourite is Vita Coco Extra Virgin Organic Coconut Oil)

  2. Add a tbsp of the batter and cook until golden brown on each side. Repeat until you have used all the mixture

  3. Stack your pancakes and decorate with your favourite toppings! We topped ours with Coyo Coconut Milk Yogurt, Two Birds Bare Super Seeds Breakfast Boost, crushed pistachios, fresh raspberries, and a drizzle of date nectar. Absolutely dream!
